MOLES DE TLAXCALA

Tlaxcala mole is a delicious dish of the representative gastronomy of that state.

Mole de chito con filete de res San Juan Ixtenco, Tlaxcala. 

This is a mole unique in its style. We prepare it according to Nahua traditions whit guajillo chile, ancho chile, pasilla chile, pumpkin seeds and squash blossom. Served with beef steak.

Mole de guajolote Contla de Juan Cuamatzi, Tlaxcala.

Mole of Nahua origin. Prepared with mulato chile, chipotle chile and pasilla chile. Served with turkey, the traditional way.

Mole verde tlaxcalteca Contla de Juan Cuamatzi, Tlaxcala.

Traditional mole from the southern communities of Tlaxcala, made with tomatillos and serrano chile with a touch of cumin. Served with, fresh fava beans, zucchini and pork belly.

Mole de ladrillo (Matuma) San Juan Ixtenco, Tlaxcala.

This is a ritual mole Otomí. It prepares for festivities of Saint John the Baptist. It has a brilliant color and we prepare with guajillo chile, onion, garlic and coriander seeds. Served with beef steak and long tamal.

Mole colorado de fiesta Contla de Juan Cuamatzi, Tlaxcala.

Made with ancho chile, pasilla chile, mulato chile and chipotle chile, it is served with turkey. According to the occasion of the ritual, it is accompanied with long anise tamal.
